Zucchini Noodles

Zucchini “Pasta” with Chicken and Carrots
Ingredients:
1/2 cooked chicken, meat cut into small pieces
3 zucchinis
6 carrots
1/2 carton of veggie broth
4 tbsp butter
salt, pepper
Spiralize or julienne your zucchinis into long thin strips. The thinner the better, as they will cook faster and more resemble pasta noodles. Cut carrots into coin like pieces. Heat your broth over medium-high heat in a large pot. Once it is close to boiling, add your zucchini and carrots. Make sure to stir them so they are all covered in the broth. I did this in two batches so they were all submerged. Then, add your lid to steam the veggies. Cook for 4-8 minutes. Make sure your carrots are tender and the zucchini isn’t mushy-check often after 5 minutes. Drain the broth and add salt and pepper to taste and the butter and chicken on top. Super fast and delicious. Makes three adult servings.
