Tomatillos are husky little things. – digression here – Ever wonder why the word husky became a negative connotation? Back in the day it was a term of endearment used for those that were built like bulldogs like my brothers. They were husky, which mean they were tough and big (everybody is big to a 5 year old)… but now I have to call them masculine or bulldogs or even occasionally by their actual names (oh my!).
Whatever… tomatillos don’t care if I call them husky, because they are not sensitive. In fact, you can store them for a few weeks in the refrigerator and even freeze them.
They are literally husky. Don’t eat the husk it is inedible. The inside is what you are going for. 🙂
They can be eaten raw, steamed, blanched in boiling water or fried, made into sauces, mixed into margaritas (just throwing that in here to see if you are paying attention. 😉 And added to chili. The possibilities are endless. Raw tomatillos add a fresh citrus-like flavor. Roasting mellows the flavor.
