Potato Hash with Caramelized Onions

I call this recipe Double Potato Hash because it requires two kinds of potatoes, and also because you should really double the recipe because it tastes so good!
Everyone asks if there is bacon in it, but it’s just the caramelized red onion. Both of these potatoes are in the Space Girl Organics box this week. Using cooked, cold potatoes (leftovers work great) is the key, otherwise you will end up with mashed potatoes.
Yield: 2-3 side dish servings
Ingredients:
1 T. olive oil
¼ c. diced red onion
1 cup diced cooked & cooled sweet potato
1 cup diced cooked & cooled white potato
1 T chopped cilantro
½ tsp. paprika
salt & pepper to taste
Directions:
Place a large skillet over medium heat. When heated, pour in the olive oil. Add the red onion and cook until the edges start browning. Then add the cooled potato to the pan, separating the cubes across the pan. Resist the urge to stir! Let the potato cook for 4 minutes, then turn and cook until the other side is crispy, about 3 more minutes. Sprinkle with salt, pepper, and paprika. Turn off heat and stir in chopped cilantro.
