Sunchokes will make you…
This week we have sunchokes available. These nutty little tubbers taste “grape” sliced on a salad or toasted, or roasted like a potato. They are low in glycemic index so they are a great alternative to potatoes for those that have diabetes.
However, hmm… no lady like way to say this, they will make you go TOOT TOOT. Your spouse may seek alternative sleeping arrangements. Your dogs may hide outside. As your produce lady, I felt compelled to see just how many of these a person could eat before they got painful stomach gas. Yesterday, I ate two lbs. Nothing, no problem for me. But, that means nothing other than I ate two lbs of sunchokes. Why? I have an iron stomach. I guess when you grow up eating rocky mountain oysters and the occasional road kill – them sunchokes are easy peasy.
But really, until you know what they will do to you… don’t consume them in mass quantities. Test them out first. Love them, and hope your digestive seems loves them too.
