Storing Summer Berries

We all love berries, but sometimes they go moldy before you get around to eating them, even if you keep them in the fridge. Obviously you could just eat them right away – I mean, why wait? But if you want to make them last longer, what can you do?

A lot of people suggest that you shouldn’t wash them until you’re about to eat them, but that doesn’t always help.

What you need to do is to clean them right away as soon as they arrive to wash off any spores. First get rid of any that show signs of mold, then wash the rest thoroughly in a colander. You can just use plain water. If you really want to extend their life, dunk them in a mixture of 3 parts water to 1 part vinegar then rinse them in lots of cold water to get rid of the vinegar. If you don’t have vinegar, you can dunk them in hot water for 20-30 seconds instead. Not too long or you’ll start cooking them!

Now here’s the really important bit. You have to get rid of all the moisture, or they’ll go moldy really fast. Dry them with paper towel. Then put them in a clean container lined with two or three layers of paper towel. When you put them back in the fridge, don’t put the lid on so your berries can breathe.

Now your berries should last several days! Yay!
