Next week we have spaghetti squash available. What is it? Well, it is a hard squash that when cooked, the innerds (right, probably not the best word to describe the inside, but that you know what I mean!) look like spaghetti.
How do you cook it? Well, most people cut it in half, put it in a baking dish with a little water and cook for 45 minutes around 350. Me? Oh, that cutting business is just way too much work. I put it on a baking sheet in a cold oven. Turn it on 350 and wait about an hour. When done cooking it should have sank a bit.
Then, I take it out, cut it in half and scoop out the seeds and pull out the noodles. Once you have your fake out spaghetti noodles you can use them in place of the pasta. Can I get a yeehaw from all the celiac peeps out there? Personally, I keep it simple. Butter, olive oil, salt and maybe some herbs. However, you can add meat sauce, or alfredo, or just saute the noodles with butter/ oil and cherry tomatoes.
