Roasted Parmesan Fennel

Here is an easy delicious preparation for fennel! You can double or triple this recipe depending on the amount of fennel you have.
1 tablespoons olive oil
1 fennel bulb, cut horizontally into 1/3-inch thick slices
Salt and pepper to taste
1 heaping tablespoon of good quality parmesan cheese
Preheat the oven to 375 degrees. Lightly grease a small glass baking dish. Place the fennel in the baking dish. Season it with salt and pepper and sprinkle with parmesan. Drizzle with olive oil. Bake until the fennel is tender and golden brown, about 30 minutes.
After roasting, you can use the fennel fronds sprinkled over the roasted fennel as a garnish if desired.
