Potato Leek Soup
I had my wisdom teeth out a few weeks ago. Um, ouch! Let me tell you what- I have never had pain so horrible and I delivered Fiona drug free!!! Oh my! Anywho… it was souptastic around here while I was recovering. Potato leek soup is always a crowd pleaser in this house.
1 lb of potatoes peeled and diced
1 leek sliced thin and the top dark green part disgaurded (save that for stock by freezing!)
4 cups broth (I make my own very easily by saving kitchen scraps and simmering in them in a pot of salted water).
3 tablespoons of butter
salt and pepper to taste
1/2 cup heavy cream (optional and you can also use milk).
Saute the leeks in the butter until they sweat.
Add broth and potatoes.
Bring to a boil and then turn down to a simmer until the potato as soft (about 25 minutes).
Working in small batches use a blender to puree.
Stir in the cream.
My mister being the King Carnivore that he is… likes to add diced ham. My sister-in-law serves hers in a bread bowl. Personally, I like it just the way it is.
