Pickled Sweet Mini Peppers

Pickling your own produce is easier than you think! Here is an easy and light pickling recipe. You can alter the ratios to suit your tastes or add more spices.
1 package mini sweet peppers, sliced thin
2 cups rice wine vinegar
1 cup water
1/2 cup cane sugar
2 tablespoon sea salt
2 teaspoons of whole peppercorns
a pinch of red chili flakes
1 bay leaf
Bring vinegar, water, salt and sugar to a boil in a small sauce pan. Stir in peppercorn, chili flake, bay leaf and pour over peppers. Let cool to room temp and then refrigerate.
