Oven Roasted Sweet Dumpling Squash

Here is an easy way to roast up that delicious sweet dumpling squash from Space Girl Organics. Sweet dumpling squash is awesome! It has a great taste and is easy to work with because you don’t have to peel it! The peel is edible.
1 sweet dumpling squash
Preheat oven to 425 degrees. Cut the squash in half lengthwise. Remove the seeds. Cut the squash into 3/4 inch wedges. Place the squash “fries” in a bowl and toss with a small amount of olive oil and sea salt. Place in a single layer in a baking sheet. Cook for 10 minutes. Flip and continue roasting until tender and slightly golden brown (approximately another 10 to 20 minutes).
If you don’t want “squash fries” you can roast the whole halves (like acorn squash) at 400 degrees until soft and tender.
