Oven Roasted Green Beans

Here is an easy recipe for oven roasted green beans. This works well adding in other mixed veggies also!  I love adding diced onion and grape tomatoes from Space Girl Organics.  Roasting veggies really brings out their natural delicious flavor.

1 1/2 pounds green beans*
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Preheat the oven to 425 degrees.  Trim the woody end off of the green beans and add to a large bowl.  Toss with the olive oil, salt and pepper and spread out evenly on a baking sheet.  Roast, stirring once halfway through, until lightly browned. 12 to 15 minutes.

*Water and roasting don’t mix.  Your vegetables should be dry before roasting them.  Otherwise, they will steam instead of roast.

I love to top off my roasted veggies with a drizzle of balsamic glaze!
