Oven Baked Sweet Potato Fries

Sure, you can pick up a bag of sweet potato fries in the grocery store freezer section, but once you find out how easy and inexpensive it is to make organic sweet potato fries at home, you will leave them in the freezer! I was lucky to get a big, 2 pound organic sweet potato in my Space Girl Organics produce box, but if yours are smaller, plan on about a half-pound per person as a side dish.
2 pounds organic sweet potato
1 T olive or coconut oil
½ t raw organic sugar
Salt & Pepper to taste
Preheat the oven to 425 degrees.
Wash and scrub the sweet potatoes, and dry thoroughly. Cut off one end just enough to make a flat base, and cut the potatoes into 1/8 inch planks. Then turn the potatoes and cut again to end up with 1/8 inch square fries. Toss the sweet potatoes in a bowl with the oil and sugar, which helps them to get brown and crispy.
Spread out the fries on a large baking sheet in a single layer. Bake for 10 minutes, then turn them over and bake for another 10 minutes. Sweet potatoes vary in moisture content, so yours may need an extra few minutes to get crispy. Sprinkle with salt and pepper to taste before serving.
