Ooh la la Green Bean Salad

Okay, so do all of you remember when I told you I would be making simple things that didn’t take too much time? Well, please throw that out this week. Because of our beautiful green beans from Space Girl Organics, I got inspired to make a salad that reminds me of Paris. It’s a full meal salad for two or three, or a side dish for five or six. And like Paris, it’s worth the time.
The salad ingredients:
1/2 pound green bean beans, cleaned, snapped, and steamed to al dente (you want them on the crunchy side of al dente), then cooled in cold water to stop cooking
1 pound potatoes, cut into bite-sized pieces, boiled in water with 1/2 tsp. salt, then drained and cooled in cold water to stop cooking
3 hard-cooked eggs (use your favorite method, mine is to bring them to boil on the stove, boil for two minutes, then turn the heat off and let them sit for 5-6 minutes more), cooled, peeled and sliced into about half a dozen slices each
1 cup Spanish salad olives (can use any olives you have in the house, but don’t leave them out)
1/6 cup olive oil
About two tablespoons of dry white wine (you’re sipping it while you cook, right?), or you can use white wine vinegar and it will be more tangy, so use a little less if you are using vinegar
3/4 -1 tablespoon good mustard (Dijon would be fine; I used a Bavarian sweet mustard. Just don’t use the mustard you put on hot dogs.)
1/4 tsp. salt
1/4 tsp. ground black pepper
Mix the dressing and pour over the salad, and chill. You can also eat this one room temperature or a little warm, and it’s delicious.
