Meet New Blogger Jenni! (Oven Baked Eggplant and Sauteed Kale with Cheddar)

Oven Baked Eggplant
1 graffiti eggplant, washed and cut into 1″ slices
2-3 ounces Raw Cheddar Cheese, finely grated
Grease a pan and/or brush each slice of eggplant with a little oil (I used organic sunflower oil, but coconut oil or EVOO would work fine as well). Bake on 350 for 10-15 minutes.
Top with grated Raw Cheddar or Havarti
1-2 tablespoons of your favorite cooking oil
2 teaspoons of minced garlic
1 pound of kale, rinsed, de-stemmed, and cut into 1-2″ pieces
2-3 ounces raw Cheddar Cheese, finely grated
Heat oil on medium heat.
Add garlic and cook until the flavor begins to release, before browning.
Add kale and cook, uncovered, stirring frequently until wilted.
Top with grated Raw Cheddar Cheese.
