Meet Maggie and her mashed purple sweet potatoes!
Hello organic peeps! My name is Maggie Franke and I am a 29 year-old food loving, beach girl and “rare” Florida native. I hope to take you on my quest for a healthier lifestyle. My first space girl box arrived last week and my husband and I have made it through most of the contents. At first, we thought there was no way we’d eat everything in one week, but I’ve just added a shipment for Wednesday due to diminishing stores.
There are a number of reasons why I chose to “go organic” but one of the most exciting was the prospect of the rare and unconventional veggie showing up the box that would challenge me to leave my cooking comfort zone and experiment with something new. This week it was the purple potato, sweet potato actually. I’m love with the color purple and can’t resist anything potato, so it was a match made in heaven. Now, what to do with this ultraviolet tuber? When in doubt…Mash it! I made these over my lunch break (I work from home).
Cooking these purple devils was really fun. I was amazed at the vibrant color shining through the space where I had freshly peeled. The potatoes turned my boiling water a deep purple (natural dye anyone?). There is a great inherent flavor in the potatoes, so I scaled down the ingredients to let the natural goodness come through. Hope you have as much fun I did cooking up this simple recipe.
Most of my recipes will be based on cooking for two, so if you have a larger family, just double the ingredients. It’s a simple recipe. You could always jazz it up by adding maple syrup in lieu of sugar with a garnish of chopped nuts.
Purple Potatoes for People to Eat
Word of Caution: These purple potatoes will stain your hands; so unless you’d like to have purple palms, handle with care.
Prep: 5 minutes Cook time: 25 minutes Serves: 2
2 large purple sweet potatoes (skinned and cubed)
2 tablespoons butter (vegans could substitute a teaspoon of their preferred oil)
1 tsp salt
2 tsp light brown sugar
Black pepper to taste
Boil cubed potatoes for 20 minutes
Mash potatoes using a potato masher until just blended
Combine potatoes with butter
Stir in brown sugar
Season with salt & black pepper
