Maple Roasted Sweet Potatoes
One purple sweet potato (or could use an orange one), washed and cut into 3/8 inch rounds, and with the rounds quartered
1 1/2 tablespoons olive oil
2 heaping teaspoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon black pepper
1 tablespoon real maple syrup (you can substitute honey)
You can also add a little salt if you’d like.
Mix all the above in a bowl, making sure all the little pieces get coated. Spread on a shallow pan and bake at 375 degrees for about 20 minutes, or until desired doneness. Check often to make sure they don’t get overdone.
