Oh, how I love pie. Here is a recipe I make that is absolutely delish! Lemon pie (I can’t remember where I found this, but I vaguely remember a Southern Living cookbook that my mother used to have and it might have been adapted out of that).
Pour this into the shell. You can cook it straight away at 350 for 45 minutes or until slightly firm in the middle.
A trick I learned when Fiona was a baby. I was making this and she started fussing about the time it had to go in the oven. I put it in the fridge and tended to her which meant I didn’t get around to cooking it for a few hours. The grated lemon had floated to the top, which made it turn out like creme brulee when I cooked it. A wonderful mistake. Thank goodness for Fiona’s fussing. 🙂
Serve with homemade whipped cream or eat it straight up with a spoon… from the pan… because it is THAT good!
It is divine when warm, delish when room temp and perfectly acceptable to eat for breakfast. 😉
