Game Time Guacamole
This is the time of year that many of us park ourselves in front of the television on Saturdays. This fresh guacamole will happily pair with your favorite chip. I’ve also used it as a spread on sandwiches, instead of mayonnaise. On Mexican night, it will dress up a taco or burrito.
In a bowl, mash together with a fork:
One large Florida Avocado or three small very ripe Hass avocados, peeled and cored (If your avocado is very ripe, it will mash easily.)
One half onion, peeled and diced fine (1/8 inch)
One dozen grape tomatoes, diced into eighths
Four ounces sour cream (That’s half of an eight-ounce tub.)
One tablespoon fresh lemon juice (This helps keep the avocado green.)
Cover and refrigerate until use. It will last a few days in the fridge, unless you eat it all first!
