Florida Avocado Egg Salad
Did you get a big beautiful organic Florida Avocado in your Space Girl Organics box this week? Florida avocados go great in salads, sandwiches, on burgers and in smoothies. You can also use them in egg salad! Depending on the size of your avocado, the Florida avocado can replace most or all of the mayonnaise traditionally used in egg salad. You can modify this avocado egg salad recipe below with whatever fresh veggies and herbs you have on hand from your produce box! I added chopped fresh basil to my egg salad. This egg salad tasted awesome with my farm fresh local eggs that I added onto my produce box order.
Florida Avocado and Egg Salad
1 ripe Florida avocado
Juice from 1/2 lemon
5 hard boiled eggs (chopped)
2 large celery stalks
1/4 cup diced green onion
1 tablespoon organic mayo (more or less to taste)
salt and pepper to taste
Mash the Florida avocado with the lemon juice in bowl. Stir in the chopped hard boiled eggs and the remaining ingredients. Season with salt and pepper to taste.
