Easy Ramekin Eggs (toaster oven or oven)

Breakfast: the most important meal of the day. No, really, without breakfast I do not function and one does not want to be around me. I like cereal, oatmeal, and bagels just fine; but eggs is what I want when I have a few minutes to spare.
My husband, on the other hand, only really wants coffee in the morning, so I don’t get a lot of help in making fancy breakfast. So I started playing around with the easiest way to make some kind of impressive egg dish that did not require me to stand over the stove. Enter ramekins, toaster oven, and left over spinach. If you layer veggies, eggs, and cheese into a ramekin and bake for 10- 20 minutes (depending on desired doneness of egg) at 350 you get a very nice looking one-stop breakfast. I used spinach, eggs, parmesan, and bread crumbs, but I think this could be incredibly versatile. I would recommend if using heartier veggies, like broccoli or carrots to cook them first. But you could use any veggies from your Space Girl Organics produce box.
Makes 1 (but you can make as many ramekins and you have people to feed, one ramekin per person)
¾ cup spinach- packed as tight as you can get it
¼ to ½ cup grated Parmesan cheese depending on your cheese desire
1/8 cup Bread crumbs
Salt and Pepper
Turn toaster oven to 350 (or regular oven, my toaster just uses less power for small jobs and I like that)
Layer all of the spinach on the bottom, season with a little salt and pepper. Add half of cheese on top of spinach. Crack two whole eggs into another bowl then add to ramekin. I leave them whole because I like to break the yolk. If you like scrambled you can do that instead. Mix the remaining cheese and breadcrumbs together and layer that on top of the eggs. This will create a really nice crust and allow the eggs and spinach to steam underneath. Season the whole thing with a little salt and pepper and toss in the toaster. 10-12 for runny yolks 15 to 20 for more set yolks. I like to give it a little giggle to see how set me eggs are. Another variation that was also good was tortilla chips, salsa, jalapenos, and black beans in the bottom and cheddar cheese.
