Easy Eggplant Pizza

These eggplant pizzas were quick, easy and delicious! I used my awesome organic eggplant from Space Girl Organics! This will definitely go on my regular rotation of meals!
Cut eggplant into 3/4 inch thick slices. Sprinkle both sides generously with salt and let sit for half hour to draw the water out. After 30 minutes, wipe the eggplant dry to remove the moisture and extra salt. Preheat your oven to 375 degrees.
Place the eggplant on a greased baking sheet and brush the tops with olive oil. Roast the eggplant for 25 minutes. Remove from the oven and spread 1 tablespoon of marinara sauce on the top of each eggplant slice, sprinkle with parmesan and shredded cheese. Put pizzas under the broiler until the cheese is melted and slightly browned.
