Celebrating the Olympics in Rio! Fruit Salsa Recipe.

Are you enjoying the Olympics as much as we are? Fiona keeps asking me, “Now when exactly is the gymnastics going to be on!?” hehehe.
Let’s celebrate the games with fruit salsa.
One of my dear friends Candida is from San Paulo, Brazil. She is such a delightful person and the woman that taught me to iron! She cooks the most amazing food. My favorite are her corn cakes, but I have yet to master those. One thing she always has at every dinner party is some form of salsa. Here is her recipe for fruit salsa. It is UH-mazing.
- 2 mangoes OR 1 pineapple OR both!
- 1 half pint blueberries
- 1/4 bunch cilantro
- 1/2 onion
- 1 jalapeno seeded and diced (or if your feeling Frisky kick it up A LOT of notches by using the seeds- seriously… hotness!)
- 1 tbsp chili powder
- 1 teaspoon cumin
- pinch or two of salt
- juice of one lime
Dice it all up and serve with chips or over fish. YUM YUM! If you have self control (which I don’t!) this is way better if you let it sit for an hour or so before serving. That way the flavors all meld together.
