Meet Michelle: Cabbage Slaw

Meet our newest blogger- Michelle. She is your fellow customer and I am excited to see what she will be cooking up!

Hi everyone my name is Michelle Bull! I am a 33-year-old stay-at-home mom who loves organic cooking and gardening.  I am a mostly gluten free cook… as in I am gluten free until a donut calls my name…lol!  I am one of those cooks that can make super tasty healthy food with just about whatever is in the house without a recipe.  I have a wonderful husband and two great little boys.  I made most of my boys organic baby food from scratch.   My family has been eating organic and as naturally as possible for years now.   It’s amazing how much more flavor organic food has verses conventional.  I’m looking forward to sharing some my great recipes, techniques, and stories with all of you!  : )

This recipe is for a healthy Rainbow Cole Slaw.  This is not your typical Cole Slaw.  Actually, for years I thought I didn’t like Cole Slaw.  Turns out I didn’t like usual way it’s made with a ton of mayo and sugar.  I came up with this recipe when my husband and I made some smoked organic whole chickens in our smoker and we needed a side.  This recipe is one of my simplest, but very tasty. The key is to use the delicatessen style mustard.  It adds the perfect amount of kick from the horseradish and spices in the mustard, but not too much so kids will still enjoy!  This recipe is great as a side to anything BBQ, on top of burgers, or on a sandwich.  Sometimes I eat it by itself!  Like a oil and vinegar salad but better!  Hope all of you enjoy!

So, here’s the recipe…..

Rainbow Cole Slaw

1 head red cabbage, chopped
1 medium sweet onion, finely chopped
1 bunch (about 6) rainbow carrots peeled carrots, thinly sliced
1 tbsp spicy delicatessen mustard
1 tbsp creamy dijon style mustard
3 tbsp red wine vinegar
1/3 cup light organic mayonnaise

Mix all ingredients together in a large bowl and enjoy!
