Baked Bananas Foster with Oatmeal Crumb Topping (Gluten Free)

Before going gluten free I loved to bake! I even used to grind my own wheat berries into wheat flour! Ah…. good times! However, I discovered when I took wheat out of my diet I had a lot more energy and felt healthier! Kicking wheat to the curb and giving up traditional desserts made with wheat flour is totally worth having better health. There are times though when I want a sweet dessert. I started out as I usually do with what I had on hand and this recipe turned out AWESOME! This dessert has a great caramel consistency, and as a bonus this dish is quick and doesn’t make many dishes to clean! It’s great by itself, with whipped cream, or my favorite with organic vanilla coconut milk non-dairy ice cream! : )
4 ripe bananas
1/4 cup dark rum
1/4 cup brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 1/2 tablespoons unsalted cold butter
1 1/2 teaspoons unsalted cold butter
1/4 teaspoon cinnamon
3 tablespoons brown sugar
1/4 cup gluten-free all purpose flour
1/2 cup old fashioned oats
1/4 teaspoon salt
Tip: If you do not have gluten free all purpose flour you can substitute gluten free pancake mix, or (if you don’t mind gluten) wheat all purpose flour.
Combine rum, brown sugar, vanilla, and cinnamon in a 8×8 inch glass square dish.
Cut bananas lengthwise and then in halves. Dip and roll one banana piece at a time in mixture with fork until all sides of banana are covered. Lay in two rows on their sides. When all bananas are dipped fan out 2 rows until evenly disbursed.
Cut 2 1/2 tablespoons butter into thin pieces and dot on top of bananas.
In a separate bowl combine topping mixture until well combined and crumbly. Sprinkle topping over bananas.
Bake at 350 for 30 minutes. Happy baking everyone! : )
