Avocado Salad Dressing

This recipe uses a glass jar with a lid to make and store your salad dressing.   The healthy fats from the avocado make the dressing creamy, so the recipe calls for less added oil.

Makes ¾ cup

Ingredients:

1 small organic avocado

4 T balsamic vinegar

2 T olive oil

3 T water

1 t. agave syrup or honey

1 t. garlic powder

½ t. paprika

Directions:

Half the avocado with a sharp knife and remove the pit.  Using a spoon, scoop the avocado into a 2-cup glass jar with a lid (like a Mason jar or old salsa jar).  Use the spoon to mash the avocado against the sides of the jar, making it as smooth or chunky as you like.  Add the remaining ingredients, screw on the lid, and shake vigorously until the avocado is incorporated.  Enjoy!
